Andhra mutton roast or Mutton fry in Andhra style is a delicious, spicy mutton dish. It is easy to prepare with basic ingredients that are available in our kitchen

Mutton – 500 grams
Ginger garlic paste-2 tsp
Finely chopped onions-2 nos
Finely chopped tomatoes-2 nos
Red chilli powder-3 tsp
Coriander powder-2 tsp
Cinnamon stick-1/2 inch
Cardamom pods-2 nos
Curry leaves- 1 strand
Chopped Coriander leaves -2 tsp
Salt as per taste
3 tbsp Oil-3 tbsp
Wash well the mutton pieces.Now take mutton, turmeric powder, 1 tsp of red chilli powder, 1 tsp of ginger garlic paste, 1 tsp of salt, 1 tsp of oil and a half glass of water in a pressure cooker and Cook for 3-4 whistles or until it is cooked.
Now take a pan and pour oil. When oil is hot add clove, cinnamon and cardamom along with chopped onions and fry till the onions are translucent.
Now add the remaining ginger garlic paste and fry till the raw smells of ginger garlic disappear and then add chopped tomatoes, chilli powder and coriander powder and stir it well.
Add the cooked mutton pieces that was cooked before along with water to the pan and fry on medium to high flame until the water evaporates. Now add salt according to your taste and add curry leaves and coriander leaves and cook for further 10-15 minutes in low flame till the oil comes out.
