Chicken Manchurian is a traditional dish which can be prepared at home in a simple way. It is a popular starter recipe. The chopped, marinated chicken cubes minced with Manchurian sauce makes it a quick recipe. Chicken Manchurian has half cooked vegetables and thick gravy which adds on to its unique texture.

Corn flour, Ginger, Garlic
250 gm chicken
1 tablespoon all purpose flour
1/4 cup refined oil
1/4 teaspoon green peppercorns
1/4 teaspoon chopped green chilli
1/2 cup chicken stock
1/4 teaspoon ground black pepper
2 tablespoon water
1 tablespoon corn flour
1 beaten egg
1/4 teaspoon ginger
1/4 teaspoon garlic
1 handful cilantro
1 tablespoon light soya sauce
1/4 teaspoon sugar
1 finely chopped spring onions
Prepare the batter
Soak the chicken pieces in lukewarm water for some time, this makes the pieces tender and juicy. Take a bowl and add cornflour, flour, salt and pepper along with the beaten egg in it. Mix all these ingredients properly and prepare a batter. Next, dip the chicken pieces in the batter one by one. Make sure it is properly coated and keep aside for 10-15 minutes.
Fry the Chicken
Take oil in a pan and heat over medium flame. Place the batter coated chicken pieces in the oil when the oil is sufficiently hot and deep fry till the color turn golden brown. Drain the excess oil and keep aside for future use.
Preparation of Manchurian sauce
Heat oil in another pan over medium flame. Add garlic and ginger in the oil when it is hot enough, Fry till it becomes slightly brown in color. Now add in green chillies and cilantro leaves. Saute all these things for about a minute or two. Now sim the flame and add chicken stock, soya sauce,salt,sugar and pepper in Manchurian sauce. Allow this mixture to simmer and cook for 5 minutes. Now in a cup mix corn flour along with water and pour in the gravy it and let the mixture to boil. Now your manchurian sauce is ready.
Garnish with chopped spring onions and serve hot with fried rice or Pan Fried Noodles or Hakka Noodles.
