Garlic Chicken

Garlic chicken is a finger-licking dish made with simple ingredients. It is dish of wonderfully balanced blend of flavors. It has got a little bit of everything – a nice heat from the chillies, tangy sweetness from the onion-tomato paste, and a subtle hint of vinegar.

Ingredients


Small chicken pieces- 500 grams
Finely chopped garlic- 3 tablespoons
Finely chopped onions- 2 medium
Finely chopped tomato -1 small
Crushed dry chillies 1- tablespoon
Thinly sliced green chillies- 2 pcs
Vinegar -1 tablespoon
Salt to taste
Sugar- 1/2 teaspoon
Spring onions- if you like

Instructions


Mix crushed dry chillies, vinegar, crushed garlic and salt to the chicken pieces very well and set aside for an hour. This marination is required to get all the great flavors of garlic.

Preparation


Heat some oil in a thick-bottomed pan. Add chopped onions and cook on a medium flame while stirring occasionally.
Saute the onions till they are tender and cooked well. Add the chopped tomatoes When the onions start turning brown, and cook
on a low flame.
Add salt, sugar and 3 tablespoons of water when the onion and tomato mix reach a thick paste like consistency.
Mix well and transfer the contents to another bowl when the water start to disappear.
Now add a little oil in the same pan and braise the marinated chicken on a high flame.
Fry for a couple of minutes and Stir occasionally. Now lower the flame, close the pan with a lid and cook for about 10 minutes.
Open the lid and add the previously made onion-tomato paste to the pan, mix it well and cook on a low flame.
Add salt if required. When the chicken pieces is evenly coated by onion-tomato paste, add chopped green chillies and a tablespoon of finely chopped spring onions to it(If you like spring onions)
Saute well and cook for a couple of minutes and now Garlic chicken is ready.

Garnish


Garnish with spring onions, and serve hot. This garlic chicken goes well with plain rice and hakka noodles. You can also serve it with chilli garlic noodles or chilli garlic fried rice.
