Mutton Do Pyaza Recipe is made with lots of crunchy onions, yogurt and a burst of spices. The name Do Pyaza derived as the onions are added at two stages during cooking.

Mutton- 450 grams (small pieces)
Thinly sliced Onion- 1
Ginger Garlic Paste- 1 Tbsp
Turmeric powder- 1/2 teaspoon
Curd- 1/2 Cup
Red Chilli powder- 1 Tbsp
Cumin powder- 1 Tsp
1 teaspoon Coriander Powder- 1 Tsp
Garam masala powder- 1 Tbsp
Finely chopped Green Chillies- 2
Olive Oil- 2 Tbsp
Chopped Coriander Leaves- Few
Salt to taste
Lemon juice- 1/2 tsp
1 Onion roughly chopped in chunks
Dry Red Chillies- 6
Take a tablespoon of oil in a pan and sauté sliced onions on medium heat till browned for about 2-3 minutes. Browning of onions is most important to hold up the taste of Do Pyaza.
Sauté ginger garlic paste for about 2-3 minutes on medium heat till the raw smell disappears.
Add turmeric powder, mutton and mix well. Add a little water, cover it and cook on medium high for 30 mins. in between check the mutton and add more water if require and sauté.
Now add coriander, cumin powder, red chilli powder, Yogurt and mix well. Cover it again and cook for another 30 minutes on medium high heat.
Add Garam masala, chopped coriander, salt and mix well.
Take 1 tablespoon oil in a medium pan and when the oil is hot, add dry red chilies and fry for few seconds until they brown up.
Then add roughly chopped onions to it and Sauté for 2-3 minutes until onions become tender and brown. Pour this over mutton, mix it well, cover and cook on low heat for 10 minutes. Add lemon juice and your Mutton Do Pyaza is ready.
