Mutton Rogan Josh is a Kashmiri style deep red spicy mutton dish made with spices like fennel seeds and dry ginger. The color of the gravy is amazing red and a layer of ghee on top.

Fennel Seed Powder

Mutton- 500 gram
Lemon Juice – 2 tsp
Salt to taste
Garam Masala Powder– 2 tsp
In a bowl; take mutton, salt and lemon juice, mix well and leave it to marinate at least for 2 hours.It would be better if you marinate overnight.
Take curd in a bowl and whisk it to make a smooth paste. Now add all the ingredients included in ” For paste “, mix well and set aside for future use
Now heat ghee in a pot. Add in all the ingredients as stated in ” For tempering ” and saute for 2-3 min.
Add some pieces of mutton and fry it brown and remove it to a plate. This way continue frying mutton batch by batch. Add all the browned mutton when you have completed browning the last batch, and let it all heat through.
Now add curd mix that you have kept aside and mix well and cook for 10 mins.
Add water and mix well. Add more salt if require. Now bring everything to a boil, cover the pot and cook for 2 hours in very low heat.
Turn off the heat once it is cooked and the meat falls off the bone. Your Mutton Rogan Josh is ready to serve.
Mutton Rogan Josh goes well when served with any steamed rice or roti.
