Phirni or firni is a classic Indian rice pudding served as a dessert. It is mainly prepared during festive occasions like Diwali.

Soak basmati rice in water for 30 minutes.
Drain the water and make a coarse paste in a blender. Keep aside for future use.
Heat 1 litre full cream milk in a kadai.
Take 1 tbsp of milk in a cup when it becomes warm and stir the saffron strands in this warm milk and keep aside.
When the milk start boiling, lower the flame and stir in between.
Boil the milk on low flame until it becomes thick.
Now add in coarse basmati rice paste that you made before.
Stir continuously for 5 minutes so that no lumps form there.
Simmer for more 5 minutes and stir in between.
Boil the milk until the rice gets completely cooked.
Now add ¼ cup of sugar and 1 tbsp saffron milk and mix well.
When the milk begins to thick and creamy, add cardamom powder and mix well. Now your Phirni is ready. Switch off flame and let it cool and then place it in a refrigerator.
Garnish Phirni with sliced almonds and serve it chilled.
